Our Almond Cake Recipe

Ingredients:

9 eggs

400 g sugar

100 g self-rising flour

100 g potato starch

1 teaspoon baking powder

Butter for greasing

For the filling and topping: 200 g sliced ​​and toasted almonds

For the buttercream: beat 3 egg yolks with 125 g fine sugar and 250 g butter.


Preparation:

Using a mixer, beat the egg yolks with the sugar until fluffy.

Beat the egg whites until stiff peaks form and fold them into the previous mixture with a wooden spoon.

Add the sifted flour and potato starch to prevent lumps, and finally, the baking powder.

Pour the batter into a buttered pan and bake in a preheated oven at 180ºC for about 30 minutes (check for doneness with a toothpick).

Remove from the pan and let it cool.

Once cooled, cut the cake and divide it into two equal parts.

Spread one part with the buttercream and sprinkle with some sliced and toasted almonds. Place the other part of the cake on top.

Coat the cake with the remaining buttercream and spread the sliced and toasted almonds on top of the cream.
